Recreate the Magic with Chocolate Covered Mickey Mouse Rice Krispies from Disney World
After our epic trip to Walt Disney World a couple of weeks ago, I couldn’t resist getting into the kitchen to put the Mickey Mouse sandwich cutter I bought to good use. While browsing through the incredibly huge World of Disney store, I couldn’t pass up the chance to try making some chocolate-covered Mickey Mouse Rice Krispies! Because who doesn’t love Rice Krispies treats? And I bet you’ve never seen Rice Krispies treats as adorable as these!
From M&Ms to Double Chocolate
You can find almost every major food group in Mickey form at Disney World – waffles, giant pretzels, ice cream sandwiches – but the absolute pinnacle is the Rice Krispies Mickey. Kids love them, adults love them. And if you don’t love them, you seriously need to rethink your life choices.
They come in SO MANY variations, but today I’m sticking with three classics for you: Mini M&Ms, chocolate sprinkles, and double chocolate.
Creative with M&Ms, Smarties, and Sprinkles
If you’re a regular around here, you might have seen the USA baking haul post I shared earlier this week, and I’ve put the Mini M&Ms and bright-coloured sprinkles to good use in today’s recipe. Of course, if you can’t find Mini M&Ms in the UK, you can use full-size ones, or even track down some Mini Smarties, which are much easier to find on this side of the Atlantic.
Tips for Making Perfect Chocolate Covered Mickey Mouse Rice Krispies Treats
Make sure you use the biggest saucepan you’ve got. There’s 300g of marshmallows here, and little mallows don’t weigh much, so 300g is a lot more than you think! As mentioned earlier, you’re going to need to stir the mallows as they melt to avoid disaster, so you’ll thank me if you grab the giant saucepan that you only ever really use for stew.
Melt the butter first, then add the marshmallows. I skipped this step the first time, and it ended in tears. Yes, I know you want to get to the eating as soon as possible, but skipping this step is not recommended.
The Right Way to Mix Marshmallows & Rice Krispies
Add the Rice Krispies to the saucepan of melted marshmallows, not the other way around. The melty mallows will be super sticky, so you don’t want to spend precious time scraping it out of the inside of a saucepan. Be a bit forceful when you’re stirring the Rice Krispies – don’t worry about crushing a few. You need to make sure all the Krispies are coated in marshmallow, or they won’t stick together.
The Secret to That Perfect Sticky Crunch
It’s not just about the looks, though! When it comes to the actual marshmallow Rice Krispies treats, these beauties are just as good as you remember – yummy sticky marshmallow and crunchy pops make the best combination. But please, make sure to use butter, and stir the marshmallows almost constantly when melting (over a LOW heat), or you’ll face the dismay of burnt mallow. Great news for s’mores, but terrible if you want a fabulous marshmallow Rice Krispies treat.
When pressing the Rice Krispies treats into your baking tray, rub some flavorless oil (I used sunflower) onto your hands to avoid the gooey marshmallow getting everywhere. Trust me, it works!
Don’t have lollipop sticks or a Mickey Mouse cutter? These treats work almost as well cut into squares, circles, or any shape using whatever cutter you have lying around. And while you’re at it, consider trying a cherry amaretto fudge recipe for another delicious treat. No matter the shape, everyone is sure to enjoy them!
Chocolate covered Mickey Mouse rice Krispies
Equipment
- 10 Lollipop sticks
Ingredients
- 55 g (1⁄4 cup) unsalted butter
- 300 g (6 cups) mini marshmallows
- 150 g (6 cups) Rice Krispies cereal
- 266 g Mini M&Ms
- 250 g Dark or semi-sweet chocolate
Instructions
- In your largest saucepan, gently heat the butter on low until it melts. Once the butter has completely melted, add the marshmallows. Melt the marshmallows on low, stirring almost constantly, until they’re fully melted and you have a smooth, sticky goo.
- Take the saucepan off the heat and quickly pour in the Rice Krispies cereal. Stir continuously until the cereal is completely covered in the marshmallow mixture. It might be a bit sticky, but you’ll get it evenly mixed in the end!
- Spray a 9×13 inch baking tray with non-stick spray (or grease with butter or oil) and spoon the Rice Krispies mixture into it. Evenly spread the mixture into the corners of the dish, pressing it down to ensure it’s compact. To prevent the sticky marshmallow from getting all over your hands, rub a bit of flavorless oil (like sunflower oil) on them. Once done, place the dish in the fridge to chill for about an hour.
- Once set, remove from the fridge and turn it out onto a work surface. Use a Mickey Mouse cookie cutter (or sandwich cutter) to cut the mixture into Mickey shapes. Applying a bit of flavorless oil to the cutter can prevent it from getting too sticky. Push a lollipop stick into the base of each Mickey.
For chocolate M&M Mickey:
- Melt the dark chocolate, either in the microwave (stirring every 20 seconds) or over a saucepan of boiling water. Dip Mickey’s face into the melted chocolate, gently shake off any excess, and press a few Mini M&Ms onto it. Let it sit until set.
For sprinkle-covered Mickey:
- Melt some white chocolate and dip his face into it. Remove any excess by shaking, then quickly dip it into a plate of colorful sprinkles. Allow it to set.
For double chocolate Mickey:
- Melt the dark chocolate and dip Mickey’s face into it, shaking off any excess. Drizzle some melted white chocolate over Mickey in lines. Leave it to set.
